Just another Monday Funday.

-- wake up -- get dressed [new jeans! yay!] -- straighten hair -- make oatmeal -- attempt to eat oatmeal -- too hot -- wait -- eat oatmeal -- watch love it or list it -- realize i'm going to miss my bus -- brush teeth -- put on jacket -- put on shoes -- leave -- walk halfway down the block -- realize i forgot my lunch -- walk halfway back -- struggle to take off jacket and purse -- grab lunch -- basically sprint to bus stop -- sprint across road to avoid a cement truck -- make the bus -- get off the bus -- get to work 10 minutes late. oops.
so then i worked and it was all fine and dandy and hunky dory. then we found out there was a tornado warning/watch for the edmonton area, so i was pretty stressed out. nothing happened until i got home, and even then it was just rainy. super super rainy. but i can handle rain. theeeeeen i got a real good craving for a cupcake, and i knew that a blogger i follow (Kylee) posts yummy treats on her blog all the time. so i went a-stalking. and found glazed donut muffins. commence drooling.

Glazed Donut Muffins
batter:
- 1/4 cup butter
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 2 eggs
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon ground nutmeg
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 2/3 cup flour
- 1 cup milk
glaze
- 3 tablespoons butter (melted)
- 1 cup icing sugar
- 3/4 teaspoon vanilla
- 2 tablespoons hot water
directions
- preheat the oven to 425°f. lightly grease a standard muffin tin or line with 12 paper muffin cups.
- in a medium-sized mixing bowl, cream together the butter, vegetable oil, and sugars till smooth.
- add the eggs, beating to combine.
- stir in the baking powder, baking soda, nutmeg, cinnamon, salt, and vanilla.
- stir the flour alternately with the milk, beginning and ending with the flour.
- spoon the batter evenly into the prepared pan - filling the cups nearly full.
- bake the muffins 15 - 17 minutes, or until they’re a pale golden brown.
- in a medium bowl, prepare the glaze by mixing together the melted butter, confectioners sugar, vanilla and water.
- whisk until smooth.
- when muffins have cooled slightly, dip the muffin crown into the glaze and allow the glaze to harden. [double dip optional]
